The fermentors are empty and that cannot fly. Unfortunately, time is tight and I cannot invest a full day into a brew anytime soon. So to combat my cenosillicaphobia I decided to give my graf recipe another go.
I very recently finished the last bottle of my 2014 graf and was pleased with its final form. The beer was constantly evolving with each passing season, and I really enjoyed the few bottles that survived the full year. The recipe is straight forward enough to squeeze into an afternoon, so it fit my schedule perfectly.
I adjusted the recipe a little bit for this session though. The beer:cider ratio was upped from 2:3 to 1:1, in hopes of creating something a bit more complex and full-bodied. Once bottled, I will age the beer until mid-to-late summer. This way the beer can grow into itself and will be ready for apple season.
