FUMIGATOR (2nd Session - May, 2015)

SUMMARY
This beer was AWESOME. 
After tuning the recipe a bit from my previous attempt, this beer is amazing. I readjusted the grain bill, took it easy on the fruit, and hopped it a tad more. 

The beer had a great flavor. The Citra hops really brought this beer to life.

RECIPE
Grains (12.7lbs)
     7.0 lbs 2-Row Barley
     4.0 lbs Wheat Malt
     1.0 lbs Vienna Malt
     0.2 lbs Acid Malt
     0.5 lbs Flaked Barley
Hops (59.4 AAUs)
     14.2 AAUs Cascade (2oz | 7.1%)
     18.0 AAUs Centennial (2oz | 9.0%)
     27.2 AAUs Citra (2oz | 13.6%)
Yeast (1 Packet)
American Ale 1056 (Wyeast)
(Medium-Low | 73-77% | 60-72°F)
Misc
2 Grapefruit (1 Zest | 1 Peel)
3 Navel Oranges (1 Zest | 2 Peel)
1 Lime (1 Zest)
1 Lemon (1 Zest)

BREW NOTES
Mash went according to plan (OG was on point)
Straight forward boil
Muslin bags eliminated hop-related waste which plagued previous attempt
Remembered to pitch pectin this time

FERMENTATION NOTES
Added hops and frozen peels to secondary @ 2 weeks
     
TASTING NOTES
Initial Taste (2 weeks)
- Pleasant Hop Profile
- Orange on the nose
Second Taste (3 months)
- Aged better than its predecessor
- Hop character has subsided slightly
- Fruit notes have moved more to the forefront
- Smells like orange juice
- Still quite good, but prefer the early version
- Bombers ages much better than bottles

LESSONS LEARNED
Simple recipes can yield better results
Hop bags are awesome
Make 10 gallons next time
Drink it quick. Its best fresh.
