CAPTAIN TRIPS (2nd Session - Nov, 2015)

SUMMARY
This beer is OKAY.

RECIPE
Grains (1.85lbs)
     .75 lbs Crystal 120
     .50 lbs Roasted Barley
     .25 lbs Special B
     .10 lbs Chocolate Wheat
     .05 lbs Smoked Malt (Peated)
Fermentables (1.85lbs)
     3.0 lbs Amber DME
1.0 lbs Wildflower Honey (LHBS didnt have Clover or Buckwheat)
Hops (16.0 AAUs)
     8.0 AAUs Cluster (1 oz | 8%)
     8.0 AAUs Perle (1 oz | 8%)
Yeast (1 Packet of Either)
Wyeast 1056 - American Ale
(Medium/Low | 73-77% | 60-72°F)
Misc
Pectinase
1.5 gal Apple Cider
.50 gal Apple Juice

I mixed up the recipe a little bit. Decreased batch size to 4 gallons, tinkered with the steeping grains, and adjusted the beer:cider ratio. I swapped the amounts of special B and roasted barley to help make the brew taste more like a beer than a cider. For that same reason, I increased the beer:cider ratio from 2:3 to 1:1.

BREW NOTES
The brew process was exactly the same as the last, except I steeped my grains for an hour, rather than a half.

FERMENTATION NOTES
Again, nothing of note
FG: 1.021

TASTING NOTES
Initial Taste (52 weeks)
- Beer like body
- Strong raisin notes (dial back the Special B)
- Cider notes are not represented well
- Moderate fall-seasonal drink
- Rather divisive. People love it or hate it
